Rice Pilaf with Cauliflower:
This is a very mild pilaf with cauliflower cooked in a delicate blend of spices.
PREPARATION TIME: 10 minutes COOKING TIME: 45 minutes SERVES: 4
1½ cups uncooked basmati rice or long-
½ head small cauliflower, cut into ½-
1 Tbsp. light vegetable oil
½ tsp. ground coriander
3 onions, peeled, cut in half, and thinly sliced
1 tsp. ground cumin
¼ tsp. salt or to taste
2 jalapeno peppers, seeded and sliced
2 Tbsp. finely chopped fresh cilantro
1. Begin cooking the rice using your favorite method. Set aside.
