1 cup black-
1 tsp. cayenne pepper
2 onions, peeled and chopped
1/2 tsp. ground cumin
2 potatoes, peeled and diced into 1-
1/2 tsp. ground coriander
1 eggplant, cut into 1-
1 cup coconut milk or 1/4 cup half-
1 tsp. curry powder
1/4 tsp. salt or to taste

2. Add the curry powder, cayenne pepper, cumin, coriander, cocunut milk, and salt. Simmer for 10 minutes until the flavors are blended.
3. Serve hot with rice, chapatis, or toast.
