Spicy Tomato Sauce:

MAKES 2 CUPS
1 Tbsp. vegetable oil
1/4 to 1/2 tsp. chili powder
1 onion, peeled and finely chopped
1 tsp. brown sugar
2 cloves garlic, peeled and minced
1/2 tsp. salt
4 ripe tomatoes, chopped
1. In a saucepan, heat the oil and add the onion and garlic. Sauté for 3 minutes.
Add the tomatoes and simmer until soft. In an electric blender, food processor, or
food mill, puree the mixture. (Your choice of equipment depends on your preference
