Creamy Mushrooms:
This versatile dish can be served as an hors d'oeuvre, using toothpicks, as an appetizer, or as a side dish.
 
Creamy Mushrooms
 
PREPARATION TIME: 10 minutes    COOKING TIME: 6 minutes     SERVES: 4
 
1 lb. fresh button mushrooms1/8 tsp. chili powder
1 Tbsp. virgin olive oil1/8 tsp. freshly ground black pepper
1 red onion, peeled and choppedSalt to taste
2 Tbsp. yogurt cheese2 Tbsp. chopped fresh cilantro
 

1. Wipe the mushrooms clean of surface dirt with a damp cloth and set aside.
2. In a nonstick saucepan, heat the oil. Add the onion and saute for 3 minutes. Add the mushrooms and saute for 3 minutes, until soft. Add the yogurt cheese, chili powder, pepper, salt, and cilantro; stir well.
3. Serve hot.
