Spicy Corn on the Cob:
Corn on the cob might seem to taste best grilled, but you can get equally delicious results from baking this recipe in the oven. I've given you two kinds of basting sauces - one spicy, one mild and sweet.
 
Spicy Corn on the Cob
 
PREPARATION TIME: 10 minutes    COOKING TIME: 50 minutes     SERVES: 4
 
4 ears of fresh corn, husks and silk removed
Green Chili Basting Sauce or Sweet Basting Sauce (recipes follow)
 

1. Preheat the oven to 400 degrees.
2. With a pastry brush, apply your preferred sauce evenly over each ear of corn. Wrap each cob loosely in heavy aluminum foil, so that there is enough room for heat to circulate. Cook for 45 to 50 minutes until corn is tender.
 
Green Chili Basting Sauce
2 tsp. olive oil1 tsp. honey
1-4 green chilies or jalapeno peppers, stemmed, to taste1/8 tsp. salt
1/4 tsp. chili powder1 Tbsp. fresh lime juice
1/4 tsp. freshly ground black pepper1 Tbsp. finely chopped fresh cilantro
1/4 tsp. ground cumin
In a food processor, puree all the ingredients to a coarse consistency.
 
Sweet Basting Sauce
2 tsp. olive oil 1 Tbsp. finely chopped fresh cilantro
2 tsp. honey 1/8 tsp. salt
1/4 tsp. ground cinnamon
1/4 tsp. freshly ground black pepper
Mix all the ingredients.
