Sweet Yogurt Drink (Sweet Lassi):
A good-quality yogurt is essential in preparing a tasty lassi. Homemade yogurt (p.9) from whole milk is best for this drink- it gives the drink a wonderful richness and depth.
 
PREPARATION TIME: 5 minutes       SERVES: 4
 
3 cups fresh, low-fat plain yogurt 1 Tbsp. rose water (optional)
½ cup ice 4 Tbsp. half-and-half (optional)
4 Tbsp. sugar
  

In a blender, process the yogurt, ice water, and sugar (and rose water, if desired) until the mixture is frothy. Serve over ice (with a splash of half-and-half in each glass, if desired).
