A good-quality yogurt is essential in preparing a tasty lassi. Homemade yogurt (p.9) from whole milk is best for this drink- it gives the drink a wonderful richness and depth.

| 3 cups fresh, low-fat plain yogurt |
1 Tbsp. rose water (optional) |
| ½ cup ice |
4 Tbsp. half-and-half (optional) |
| 4 Tbsp. sugar |
|

In a blender, process the yogurt, ice water, and sugar (and rose water, if desired) until the mixture is frothy. Serve over ice (with a splash of half-and-half in each glass, if desired).
